Admin Email:

The admin email address is a highly exposed email address. It is exposed during user registration...

And it is shown as the "from address" of the activation email sent to users.

It is also the "from address" of whenever you use the Mass Email feature in the Admin Panel.

To avoid exposing your personal email to a lot of spam, typically you will not want to setup your personal email as the admin email. You will want to create an separate email to be used as the admin email.

The admin email can be set in the Admin Panel under Configuration as shown here...
